Description

This carnivore mashed potatoes recipe is the ultimate low-carb side. Creamy, rich, and made with egg whites, butter, and gelatin—no cauliflower, no carbs.


Ingredients

32 oz egg whites

1 stick grass-fed butter

2 oz cream cheese

2 oz fresh mozzarella

1 tsp plain beef gelatin

2 tsp toasted gelatin

1–2 tbsp egg white powder

Optional: sea salt or garlic powder

Optional: 1–2 tbsp heavy cream


Instructions

1. Melt butter in skillet over medium-low heat.

2. Add egg whites and scramble until dry and crumbly.

3. Transfer eggs to blender while hot.

4. Add cream cheese, mozzarella, and gelatins.

5. Blend until smooth; add a splash of cream if needed.

6. Sprinkle in egg white powder and blend again.

7. Scoop and serve with seared fat or brisket.

Notes

Reheat in a saucepan with added broth or cream.

Can be made dairy-free using tallow instead of cheese.

Freezes well; just re-blend when reheating.
