Description

These carnivore pancakes are soft, fluffy, and 100% zero-carb. Made with eggs, cream cheese, and beef gelatin, they’re the perfect breakfast or snack to fuel your carnivore lifestyle—satisfying, simple, and so easy to make.


Ingredients

Scale

4 pasture-raised eggs

3 tbsp cream cheese or mascarpone

1 scoop beef gelatin (optional)

1 tbsp melted tallow or ghee

2 tbsp crushed beef crisps or pork-free rinds

Pinch of salt

Optional: chopped grass-fed sausage or whipped beef marrow


Instructions

1. Whisk eggs and cream cheese until smooth.

2. Stir in gelatin and crushed rinds or crisps.

3. Heat a skillet over medium heat with tallow or ghee.

4. Pour small pancake rounds into the pan.

5. Cover with lid and cook 1–2 minutes until edges firm.

6. Flip gently and cook another 30–60 seconds.

7. Serve warm with whipped tallow or egg cream frosting.

Notes

For dairy-free, replace cream cheese with whipped beef marrow.

Best eaten fresh but can be frozen and reheated.

Try topping with yolk butter or lamb cream cheese.
