Ingredients
3 cups cooked shredded chicken (rotisserie or homemade)
1 cup sour cream
1 can (10.5 oz) cream of chicken soup
1/2 cup chopped green onions (optional)
2 sleeves Ritz crackers, crushed
1/2 cup melted butter
Instructions
1. Preheat oven to 350°F (175°C) and grease a 9×13 baking dish.
2. In a large bowl, combine sour cream, cream of chicken soup, and green onions.
3. Fold in shredded chicken until well mixed.
4. Spread the chicken mixture evenly into the prepared baking dish.
5. In a separate bowl, combine crushed Ritz crackers with melted butter.
6. Sprinkle the cracker mixture evenly over the top.
7. Bake uncovered for 30 minutes or until golden and bubbly.
8. Let cool slightly before serving.
Notes
You can substitute plain Greek yogurt for sour cream.
